Funfetti Christmas Cupcakes

Yield: 12 cupcakes

These adorable cupcakes are rather sweet and almost don’t even need any frosting! But if you like your cupcakes frosted, feel free to use your favorite frosting or icing recipe instead of the one shown here.


For the cupcakes

  • 4 tbsp butter, melted and cooled
  • ½ c. nonfat plain yogurt
  • ¾ c. sugar
  • 1 tsp vanilla
  • 1 egg
  • 1 c. flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 6 tbsp milk
  • 4 tbsp Christmas sprinkles

For the icing

  • 2-3 tbsp powdered sugar
  • ¼ tsp clear vanilla extract
  • ½ - 1¼ tsp milk



  1. Preheat the oven to 350°, and line 12 muffin cups with paper liners.
  2. To prepare the cupcakes, whisk together the butter and yogurt until smooth. Stir in the sugar and vanilla, mixing thoroughly. Add in the egg, stirring well until the batter is smooth.
  3. In a small bowl, whisk together the flour, baking soda, and salt. Alternate between adding the milk and the flour mixture to the egg mixture, beginning and ending with the flour. Be careful not to overmix! Gently fold in the sprinkles.
  4. Divide the batter between the prepared liners, and bake at 350° for 18-22 min or until light golden and a toothpick inserted into the center comes out clean. Cool in the pan for 5 min before turning out onto a wire rack to cool completely.
  5. To prepare the icing, whisk together the powdered sugar, vanilla, and ½ teaspoon of milk in a small bowl. Add more milk as necessary to achieve the desired consistency. Drizzle or pipe over the top of the cupcakes to decorate.
