Spiced Up Kale Salad with Chicken


  • ¼ Cup Organic Extra-Virgin Olive Oil (EVOO)
  • 1 Cloves Garlic, minced (organic, if possible)
  • Juice of ½ Lemon
  • ½ Tsp. Red Pepper Flakes, plus or less, to taste
  • ¼ Cup Grated Light Parmesan cheese (You can substitute Romano, if preferred)
  • Sea Salt and Pepper, to taste
  • 4 Cups Kale. Be sure to remove the midrib when you slice them
  • ¼ Cup diced Red Pepper


1.    Combine the olive oil, garlic, lemon juice, red pepper flakes, salt and pepper. Whisk everything together.

2.    In a large bowl, add the vinaigrette over Kale and diced red peppers and toss together. Add the Parmesan and toss again.

3.   Chop the chicken breast. Add to the salad and toss or serve over the top

Alternative idea: Add chopped onion and/or pine nuts.

Alternative idea: Add a small amount of slightly sweet fruit, like chopped apples or halved red grapes.
