Recipe yield: 4 servings

Prep and cook time: 30 minutes

  • 1 lb ground turkey meat (ideal choice is 85% lean thigh meat)
  • 2 medium sized tomatoes diced
  • 6 cloves garlic minced
  • ½ cup white onions chopped
  • 1 Tbl cumin
  • 2 tsp red pepper flakes
  • 1 tsp extra virgin olive oil
  • 1 tsp sea salt
  • cracked black pepper to taste
  • 1 cup water or low sodium chicken stock
  • Sliced jalapenos for topping
  • fresh cilantro for garnish

  1. In a medium sized pot, begin heating the olive oil over medium to medium-high heat.
  2. When the olive oil has heated and is running thinly on the bottom of the pan, add the onions.
  3. Cook the onions, stirring regularly, until caramelized (transparent and slightly browned.)
  4. Add the garlic and stir until slightly browned. (Don't over cook.)
  5. Add the turkey meat.
  6. Break up the turkey meat as it begins to heat.
  7. Cook the meat until it is starting to brown. (No pink.)
  8. Add the cumin, red pepper flakes, sea salt, and black pepper.
  9. Add the tomatoes.
  10. Stir until the tomatoes are broken and cooked into the meat.
  11. Add the chicken stock or water and bring to a simmer.
  12. Remove from heat, spoon into large bowl, top with cilantro and jalapenos, if desired, and serve!
